This recipe for Loaded Broccoli is an easy keto and low carb side dish.
I’m totally gonna be one of those people who says this constantly but it’s because I really can’t get over how quickly time seems to be passing. My days are full and my life is good but gosh I can’t believe how quickly it seems the time goes. Just yesterday, it felt like 2017.
Speaking of time, let’s try to save a little with this easy vegetable recipe. When I say easy, I mean easy. Like, the easiest. But still delicious and worth talking about.
This is one of those side dishes that’s just nice to have in your back pocket. It’s not super glamorous but it’s good to have in your back pocket and certainly dresses up steamed broccoli.
But doesn’t bacon always dress up vegetables?
This is just like a loaded baked potato only sub broccoli for the potato which is helpful for those watching their carb intake or even just hoping to eat some more vegetables.
Loaded Broccoli Recipe Options
If you feel like changing this up a little, here are my recommendations:
Add some spices to the sour cream like cumin, paprika, garlic powder, etc. It’ll add some nice flavor.
I like to do a southwest version sometimes by mixing cumin and Chile powder with the sour cream and then using a Mexican blend cheese.
Add some lemon juice to the sour cream for a bright lemon flavor.
Change up the type of cheese you use. Some of my favorites are sharp cheddar, Mexican blend, parmesan or feta.
