I love breakfast. And burritos. So naturally, I love breakfast burritos. They’re handy, they’re dandy, and they’re the perfect flavorful way to start your day all wrapped up in a portable carrying tortilla device.
As I’ve said previously, I’m always down for a breakfast that can be made ahead of time and reheated on a hectic morning, so the other day I decided to make a batch of breakfast burritos to put in the freezer for future use.
Sidenote: how hard is it to wrap a burrito properly? I feel like a total amateur. I watch the burrito wrappers at Chipotle, effortlessly wrapping these enormous, small child sized burritos quickly and efficiently to keep up with the line and they rarely rip the tortillas. Except when they do, it’s such a disaster, because then the filling is everywhere and sometimes they try to double wrap your burrito and then the filling to tortilla ratio is thrown off and it’s kind of a nightmare. Anyway, they do the little tucking technique, where they somehow get allllll the fillings in one convenient section and wrap it up with perfectly rolled edges. I can hardly even get my burritos closed without fillings popping out the sides. Does that make me a bad food blogger? I guess I’ll just have to keep working on it, which I guess means I’ll have to make (and eat) a lot more burritos… #silverlining
But on to the burrito. These babies are on whole wheat tortillas stuffed with sweet potato, egg and sausage for a healthy and filling start to your morning.
You can just pop them in the microwave or toaster oven, add some hot sauce and you’re good to go. Avocado is a nice addition too, as it usually is.
Also, as you may notice, my burritos are on the relatively small side. I wanted to use whole wheat tortillas but the grocery store didn’t have any whole wheat burrito sized, so I just used taco sized. They’re kinda like baby burritos. Only they’re filling enough that you only need one. I won’t judge you if you eat two though. #truefriendship
Sweet Potato & Sausage Breakfast Burrito

- 2 pounds ground breakfast sausage
- 2 sweet potatoes
- 1 red bell pepper
- 1 yellow onion
- 12 eggs
- 1 tablespoon dried rosemary
- 1/2 tablespoon paprika
- 1 tablespoon minced garlic
- 1/2 cup green onions for topping (optional)
- salsa, sour cream, hot sauce, guacamole for topping (optional)
Instructions
- Peel and cut sweet potatoes into bite sized cubes.
- In a pan over medium-high heat, cook breakfast sausage breaking up chunks about 5-10 minutes or until cooked through.
- In another pan over medium-high heat, coat with 1 tablespoon cooking fat of your choice (I’d suggest olive oil or butter). Wait until hot, then add bell pepper and onion. Cook for two minutes then add garlic. Cook until translucent, then add in sweet potatoes. Season in pan with rosemary and paprika. Mix together, let cook until sweet potatoes are done and golden brown on edges, about 10 minutes.
- In a bowl, whisk together eggs. Cook in pan over medium-high heat with 1 tablespoon cooking fat of your choice (I used grass fed butter) until eggs are set and cooked to your liking.
- Heat up tortillas. (Can do this in the microwave wrapped in a paper towel or in the oven. Set to 350 degrees and just warm up the tortillas.
- Once all ingredients are finished, prepare workstation with tortillas, eggs, sausage, sweet potatoes and green onions, if using. Mix together eggs, sausage, sweet potatoes (This makes it easier and faster to assemble burritos).
- Lay down a tortilla and scoop out filling mixture. Tuck and roll burrito. If freezing for later, wrap in cling wrap and put in ziploc bag. Continue steps for all burritos.
- Top with your favorite toppings.
Notes
If preparing for later, allow eggs, sausage, and sweet potato mixture to cool before putting in tortilla, as this ensures the tortilla won’t get soggy from the moisture.
To freeze: simply wrap burritos in cling wrap, then place in a ziploc baggie in the freezer.
To reheat: you can use the microwave on high for two minutes or cook in a toaster oven.
