Cedar Plank Salmon with Pistachio Gremolata

  • 24 salmon filets
  • 1/2 cup chopped pistachios
  • 1/4 cup chopped fresh parsley
  • 1 lemon
  • 1/2 tbsp minced garlic
  • salt and pepper, to taste
  • (optional) lemon edges, for garnish

Instructions

  1. Put cedar plank in water for at least one hour prior to cooking.
  2. In a bowl, add chopped pistachios, parsley, zest of 1 lemon and minced garlic. Mix well and set aside.
  3. Slice lemon into 1/4″ thick pieces (it’s fine that the zest is gone). Season the salmon with salt and pepper. Lay lemon slices on top of filets.
  4. Put salmon filets on cedar plank and stick cedar plank on a grill over medium-high heat.
  5. Close lid on grill and cook for 5-7 minutes. Open grill and check for doneness. If not quite done, close lid and cook a little longer. Depending on the size and thickness of your filets, cooking time may vary.
  6. Once cooked to your liking, take off grill. Top salmon filets with pistachio gremolata. Serve with extra lemon wedges.
