- 2–4 salmon filets
- 1/2 cup chopped pistachios
- 1/4 cup chopped fresh parsley
- 1 lemon
- 1/2 tbsp minced garlic
- salt and pepper, to taste
- (optional) lemon edges, for garnish
Instructions
- Put cedar plank in water for at least one hour prior to cooking.
- In a bowl, add chopped pistachios, parsley, zest of 1 lemon and minced garlic. Mix well and set aside.
- Slice lemon into 1/4″ thick pieces (it’s fine that the zest is gone). Season the salmon with salt and pepper. Lay lemon slices on top of filets.
- Put salmon filets on cedar plank and stick cedar plank on a grill over medium-high heat.
- Close lid on grill and cook for 5-7 minutes. Open grill and check for doneness. If not quite done, close lid and cook a little longer. Depending on the size and thickness of your filets, cooking time may vary.
- Once cooked to your liking, take off grill. Top salmon filets with pistachio gremolata. Serve with extra lemon wedges.
