Quick and easy Shaved Brussels sprouts with Slivered Almonds for a healthy side dish. Great recipe for Thanksgiving or Christmas. Keto, low carb, paleo, gluten free

- 1 pd Brussels sprouts
- 1/4 cup Slivered Almonds
- 1 Lemon (zest and juice)
- 1 tsp garlic powder
- olive oil
- salt and pepper (to taste)
Instructions
- Shave Brussels sprouts on a mandolin or very very thinly slice using a knife.
- Add some olive oil to a pan and then toss in slivered almonds, allow to cook for 1 minute until getting slightly toasted. Toss in Brussels sprouts and mix well, then let cook for 5 minutes, mixing occasionally so they don’t burn.
- Add in lemon zest, garlic powder and lemon juice. Scrape up any bits off the pan after adding lemon juice.
- Add salt and pepper to taste.
- Let cook another 2 minutes then serve.
Notes
You can buy Brussels sprouts pre-shaved at Trader Joe’s (in which case you can use less than a pound) but it really is nice to shave them yourself. The texture will be even better.
