Potato Stacks with Avocado Sauce

Ingredients

  • 6 petite potatoes
  • cooking spray
  • 1 avocado
  • 1 lemon (juice + zest)
  • 1 tablespoon minced garlic
  • 1/4 cup olive oil
  • 1/4 cup parsley or to taste
  • salt and pepper, to taste

Instructions

  1. For the potatoes: Pre-heat oven to 400 degrees. Cut or use mandolin to thinly slice potatoes. Once potatoes are cut, arrange in stacks. (See notes)
  2. Spray with cooking spray or add some olive oil.
  3. Add salt and pepper to taste.
  4. Cook in oven for 20 minutes or until desired level of crispy.
  5. For the sauce: add avocado, juice from 1 lemon, zest from 1 lemon, garlic, half the parsley and olive oil to food processor.
  6. Once potatoes have finished cooking, add avocado sauce on top and sprinkle with remaining parsley.

Notes

*I put the potato stacks in a muffin tin so that there were siders to hold up the stacks.
