I’m back with another weeks worth of lunches.
I’ve mentioned this but I bring my lunch with me to work almost every day without fail.
I like packing my lunch knowing that
- I’m saving money
- I’m controlling what types of ingredients I’m using
- It makes lunch time more relaxing not having to rush anywhere
- It’s a great way to use up leftovers and be more responsible with food waste
Currently, I try to eat a low carb keto lunch. I’m not always perfect but that’s what I try just because it makes me feel better without some of the typical fatigue that comes after meal times eating other ways.
If you don’t eat that way, these ideas can still absolutely work for you. Just adjust them as you see fit. These are not set plans so much as general ideas that I hope can be helpful.
Here are my lunches
Lunch 1
Chorizo Empanadas (the green stuff is green onions and cilantro) with sour cream to dip them in. The pepperoni and slices of cheese I had for breakfast. The top right corner is a low carb Double Chocolate Peanut Butter Cheesecake bar. Recipe coming soon!

Lunch 2
Thai Chicken Coconut Soup (recipe coming soon!) topped with cilantro and green onion, there’s a lime on the side with some more low carb egg/mozzarella noodles (they kind of melted together when I re-heated them). Black bean chicken and zucchini noodles with chili garlic sauce. Topped with peanuts.
This was a lot of food and I didn’t even finish half of it. It was really nice to have some soup because I’ve been sick.
Lunch 3
Black bean chicken, chili garlic zucchini noodles. The pepperoni I ate for breakfast (wasn’t very hungry because I’m sick) and the ground beef topped with cheese I was going to eat for breakfast too but I just wasn’t very hungry.
Lunch 4
Pork tenderloin over cauliflower rice with blistered shishito peppers, tomato and balsamic and baby bell cheese.
Lunch 5
Pastrami topped with pickles and mustard, a side of feta cheese. Pickles, green olives, cheese whisps and two coffee nut fat bombs.
That’s what I’ve had this week. Hopefully some of this can be helpful if you’re thinking of things to bring for lunch.
For those that will ask, my lunch box is a Yumbox Tapas edition and I really like it! It makes it easy to get plenty of variety at lunch and has plenty of room for food (I often don’t finish everything).
