At least that’s what I like to think. But I’d expand that from just sauces to sauces – toppings – condiments. I love ’em all. They can complete a meal, elevate a dish, change the taste of your meal with just a few toppings, or a sauce, or some condiments. I’m all about it.
So I dig Pico de Gallo quite a bit, I think it’s something very simple to make but with a lot of flavor. Obvi really good with salty tortilla chips but also good on top of chicken, tacos, enchiladas, basically any type of protein or mexican type food. Also eggs, sandwiches, etc. Okay, so it’s pretty good on most things.
I decided to change it up a little and add some bell peppers to my pico and I love it. It’s got great flavor and the bell pepper adds a nice crunch to it too. Plus if you want to add a little more heat, you can leave the seeds in. But that’s up to you.
This summer I’m trying to really focus on quick and easy meals. I don’t want to spend my entire summer sitting in a kitchen (even though it’s my favorite place to be!) but instead, I want to spend it around a table, gathering with friends, talking and laughing, enjoying an easy meal that goes with the season. I want to spend it going on adventures, traveling, playing sports, going to the beach.
Of course eating is a huge part of all those things for me but I’m really working on trying not to make every meal be a two hour ordeal. Summer should be laid back, fun, easy so that’s why I’m looking to try to do in the kitchen this season.
Utilizing sauces and condiments and dips and toppings and Bell Pepper Pico de Gallo is the perfect way to get this done. Lots of flavor and not a lot of time!
Which is exactly what I’m going for.
