I bring my lunch with me to work almost every day without fail. Occasionally, I’ll make a conscious decision to eat out but it’s rare, maybe once every couple of months. I like packing my lunch knowing that 1) I’m saving money 2) I’m controlling what types of ingredients I’m using 3) it makes lunch time more relaxing and 4) it’s a great way to use up leftovers from other meals throughout the week.
I am hoping this new series of Mince Lunchbox will be helpful in showing you easy ideas for your own lunches throughout the week. Usually I eat mostly keto or low carb but there are days when I eat more carb heavy so you will see that in my meals too.
I think it’s nice to be transparent and although I do try to stay pretty diligent about eating well, I’m human with a particular affinity for nachos sometimes. So while most meals will fall in line with a keto, low carb or clean way of eating, some will not. As it should be. All in moderation, right?
Here’s a week of lunches:
Lunch 1
A piece of Lily’s chocolate, a handful of mixed nuts in a silicone container for a snack if needed, salad with cheese, bacon, carrots and ranch dressing, two Babybell cheeses and an eight ball stuffed zucchini with leftover pastrami, pimento cheese and chives
Lunch 2
Arugula, some pieces of a leftover fathead bagel, lily’s chocolate, a baby bell and keto pasta made out of egg and mozzarella, topped with Italian sausage, capers and goat cheese
Lunch 3
Green beans, coffee “macaroon” fat bombs, arugula salad with a spritz of lemon, baby bell cheese and leftover sugar free BBQ kitchen
Lunch 4
A snacky type lunch today. Arugula salad, mixed nuts, banana peppers and green olives, aioli, roast beef, cheese, pepperoni and some onions
Lunch 5
A lunch of leftovers! Jicama fries, radishes, half a bar, jalapeno cheddar zucchini muffin, ranch dressing, pork rind crusted chicken tenders, Brussels sprout Caesar salad
That’s what I’ve had this week. Hopefully some of this can be helpful if you’re thinking of things to bring for lunch.
For those that will ask, my lunch box is a Yumbox Tapas edition and I really like it! It makes it easy to get plenty of variety at lunch and has plenty of room for food (I often don’t finish everything).
