Are you into Cauliflower? I’m definitely in the camp of people who have embraced cauliflower everything and think it’s nice to have more options for ways to make favorite things a little more healthy.
Sometimes I get tired of it, just the taste of it, but when you add things like cheese, garlic and herbs, well I get right back on the Cauliflower train.
These days I limit my bread intake, and while I will occasionally eat some, those times are a lot fewer and far between. So I try to come up with fun and creative ways to create old favorites using new ingredients.
These Cheesy Cauliflower Breadsticks are no exception. In this case, I’m using the term “breadstick” a little loosely. Because these are made of Cauliflower, you aren’t going to get that real dense, chewy mouthfeel of a traditional breadstick and TBH these are easier to eat with a fork than your hand, but you are going to get that reminiscent flavor of gooey, melty cheese with garlic and herbs and it’s going to be great all the same, albeit a little different.
If you do want something a little more substantial, I would suggest adding the Almond Flour to this, which you can read more about it in my notes below.
Food Pairing
These would go great with my Zucchini Lasagna with Meat Sauce.

Description
These Cheesy Cauliflower Breadsticks are the low carb keto answer to your breadstick prayers! Cheesy, melty, garlicky and delicious, they’re easy to make and a great side!
Ingredients
- 1 12 oz package or 3 cups riced cauliflower
- 1 cup mozzarella
- 1/2 cup parmesan cheese
- 1–2 tbsp minced garlic
- 1 egg (whisked)
- 2 tsp herb blend of choice (I like oregano and parsley)
- optional 1/4 cup almond flour
Instructions
- Preheat oven to 400 degrees.
- Add riced cauliflower to a bowl and microwave for five minutes to start drying it out. Once finished, mix cauliflower with mozzarella, minced garlic and egg. Combine well.
- If you’re using the almond flour, mix in well to combine.
- Lay out cauliflower/cheese mixture on a baking sheet on parchment paper or a silicone baking mat. Top with parmesan cheese and herbs of choice.
- Cook at 400 degrees for 20 minutes. You can broil for 5 minutes after if you like it to get a little color and golden brown.
Notes
While it is possible to pick these up and eat them with your hand, it’s much easier to eat with a fork. If you really want more of a handheld breadstick, I would suggest adding the almond flour, as it will help give it a little more body.
