I confess, sometimes I don’t eat as many vegetables as I should.
However, I do like vegetables. And I love when chefs/cooks/preparers of food give you a new perspective on a vegetable dish or show you a new way it’s delicious and it’s so good because then you don’t have to be sad that you’re eating limp broccoli for the ninth day in a row.
This past summer was one of my favorites as far as food goes because it was my first summer with a garden and even better, a vegetable garden, and even better than that a vegetable garden that actually had edible vegetables. Like I was literally growing my own food.
Might not seem like that big of a deal but really it was. Turns out this thumb might be a little green after all.
In any case, today’s recipe is a little schmancy. This is for those days when you need to dress up your veggies a little, or the days where you’re trying to entertain guests, or the days where the only way you will eat vegetables is if they are wrapped in meat….
Prosciutto wrapped asparagus is not only elegant looking and delicious tasting, it’s also easy to make. Which is a win, win, win in my life.
Also, who doesn’t like bacon’s cousin prosciutto? I do. And asparagus does too.

Ingredients
- 1 bunch asparagus, not thin
- 1 package prosciutto
- olive oil
Instructions
- Pre-heat oven to 400 degrees.
- Cut off the ends of the asparagus.
- Cut slices of prosciutto in half then wrap around asparagus.
- Lightly oil baking sheet, arrange asparagus in single layer then bake for 15 mins.

The only thing that can beat prosciutto is CRISPY prosciutto – this looks super tasty Kayla!
Just want to eat a whole tray full of these meat-wrapped veggies.
