Who could turn down sausage, caramelized onions and cheese topped with chimichurri?
These are little bombs of flavors that work very well together: flavorful sausage with just a hint of heat, sweet caramelized onions, tangy smooth cheese and then a perfect dollop of chimichurri to round it out.
The cheese here is really the star and the cheese from Mahón-Menorca really stands up to these flavors. It’s pungent, tangy, with a flavor profile that perfectly accentuates the sausage and chimichurri.

Sausage, Cheese and Caramelized Onion Bites with Chimichurri

Ingredients
- 1 16 oz. package of linguica sausage (or other sausage of choice)
- Mahón-Menorca Cheese
- 1/2 yellow onion
- Chimichurri
- 2 tbsp butter
For the chimichurri:
- ½ cup cilantro
- ½ cup parsley
- ¼ cup oregano
- 2 tsp red pepper flakes
- ¼ cup red wine vinegar
- 1 tbsp garlic
- ½ cup extra virgin olive oil
- salt and pepper to taste
Instructions
- Make chimichurri. To make Chimichurri: combine cilantro, parsley, oregano, red pepper flakes, garlic in a food processor. Chop until small and well combined. Add in red wine vinegar and olive oil. Season with salt and pepper. Refrigerate for at least 2 hours before using for best results.
- Thinly slice yellow onion. Melt butter in a pan over medium heat then add onion and cook for 15 minutes, stirring occasionally until starting to caramelize.
- Cut sausage into slices and cook in a pan until warmed through and browned.
- Cut cheese into cubes.
- To assemble bites: Place sausage on plate, layer with caramelized onions, top with cheese and then drizzle over chimichurri. If you want, put a toothpick through each one to hold them together.
