I’m gonna be the first to tell you, I’ve never really been a fan of cobbler. Haven’t made many either. But every once in awhile I’ll get a random idea to try something and this just so happened to be the idea of the day so I went for it! And was pleasantly surprised with how this turned out. I hope you’ll be happy about how this turned out as well!
The crust is buttery, flakey and all kinds of biscuit perfection to top the filling that is sweet but not overly so and well rounded with a nice citrus note from orange zest and some orange juice.
Top it with a dollop of sugar free whip cream and a couple of mint leaves fresh picked from your yard and you’ve got a great little dessert.
Notes on Making Mixed Berry Cobbler
This really doesn’t have to be a “mixed” berry cobbler. I made it a mixed berry cobbler because I had frozen mixed berries in my freezer and I like it but you could certainly stick to one berry.
As difficult as it may be, you should try to let it sit for a little after coming out of the oven. Maybe 5-10 minutes or so. It’ll help it set better. Is this optional? Yes. You could absolutely also just dig right into this immediately. It just won’t set as well.

Carbquik
I love making this in a cast iron pan and passing around spoons and sharing it. You could also get little mini cast iron pans for individual servings or just use some ramekins. Either way is fine. Both are delicious.
If you don’t want this to be keto or low carb, feel free to use a different biscuit mix than Carbquik. Or even if you do want to make this keto/low carb but don’t want to use Carbquik, feel free to substitute it with a different mix or something homemade.

Ingredients
For berry filling:
- 2 cups of mixed berries (or berry of choice)
- 1 orange (you’ll need juice and zest)
- sweetener of choice (I used 1/2 tbsp domain Sante)
- 2 tbsp butter
For biscuit topping:
- 2 cups carbquik (or biscuit alternative)
- 2/3 cup water
For topping:
- sugar free whip cream
- keto friendly ice cream (such as Rebel or Halo Top)
- fresh mint
Instructions
- Preheat oven to 350 degrees.
To make berry filling:
- In a pan over medium heat, add in frozen mixed berries. Allow to cook for 5 minutes until they’re starting to melt and soften up.
- Zest orange and set aside. Then add in the juice of orange and sweetener of choice. Stir.
- Cook for 15-20 minutes, stirring occasionally, allowing the berries to reduce. Once thickened, stir in orange zest.
To make biscuit topping:
- In a bowl with a mixer or a fork, combine carbquik and water. Mix to combine.
To assemble cobbler:
- Grease a cast iron skillet or ramekin with butter. Ladle in berry mixture and then top with dollops of biscuit topping. You want the biscuit drops to be relatively close so that as it cooks they connect and create a luscious topping.
- Put in oven and cook at 350 degrees for 15-20 minutes or until biscuits are puffed up and lightly browned.
To serve:
- Pull cobbler out of the oven and allow to sit for 10 minutes prior to serving. Top with sugar free whip cream or low carb ice cream and some mint sprigs, if desired.
