Pizza. Chicken. Pizza and chicken.
Today I bring to you two things that I enjoy, married together in a symphony of harmonious flavors. Each making each other better than they were on their own in a true epic love story.
Sorry, that got a little bit away from me.
In any case, this pizza chicken really came to be because I was feeling like some pizza and pepperoni but I didn’t want to make pizza dough and I wanted to eat more than just pepperoni.
So enter pizza chicken.
Chicken breast stuffed full of your favorite pizza toppings (in my case, pepperoni) and then baked until your cheese is golden brown and perfect.
Perfectly delicious that is.
Serving Suggestions
This would go great with a nice salad or I could even see it on top of some cauliflower mash.
Notes
I didn’t put sauce in mine because I’m generally not a huge fan of pizza sauce but if you are, I’d totally suggest you toss some inside the chicken or on top under that pile of cheese.
Another great option would be some basil pesto (a combo I thoroughly enjoy and encourage)

Ingredients
- 2 chicken breasts
- 8 slices pepperoni
- 1 cup mozzarella cheese or Italian cheese blend
- optional pizza sauce, goat cheese or basil pesto
- for garnish: basil (micro greens, pesto, parmesan cheese, red pepper flakes)
- other filling ideas: sundried tomato (sausage,)
Instructions
- Cut a slit into chicken breasts lengthwise so they’re almost cut in half but with a little bit still attached so that you can “stuff” the chicken.
- I used goat cheese and spread it on the inside of the chicken then added in some chopped pepperoni. If you’re using pizza sauce, I’d put it in here.
- Fold the chicken over then top with the mozzarella cheese and more pepperoni.
- Bake at 350 for 35 minutes. You can take off 5 minutes of the baking time and stick under the broiler for 5 minutes if you want the cheese to get a little more golden brown.
- Top with garnishes of choice.
Notes
This is very easy to scale for more people, just get more chicken, pepperoni, cheese and toppings of choice.
