I think this says less about snacks themselves and more about my inability to come up with anything I find worthwhile to snack on. Although the other day there was a cauliflower flatbread, marinated goat cheese and sundered tomato situation happening for snack time and that was an A++.
But that’s the anomaly and not the norm in my life, unfortunately. However, there are sometimes when lunch was too long ago and dinner is not soon enough and you’re hungry now, verging on the point of hangry, and you need to eat something before you go ham on a bag of chips and shredded cheese. Not that that’s totally wrong, we’ve all been there, but it is also true that sometimes it’s better to have a more healthy, satisfying snack.
So the other day I’m walking around in my backyard looking around and I see some cherry tomatoes fresh on the vine, asking to be used. I pull some down, grab some chives and head into the kitchen for snack time.
I’m really partial to crunchy + salty snacks (and food in general) so I chose a nice brown rice cake topped with my garden prizes.
it totally hit the spot. For added protein, I think this would be awesome with some sliced turkey on top.

Ingredients
Scale
- 1 rice cake
- 1 tbspn hummus*
- a couple chopped cherry tomatoes
- 1/2 tablespoon chopped chives
- 1 tablespoon raw cheddar pieces/slices
- optional: fresh cracked pepper, other herbs & spices
Instructions
- Slather hummus on rice cake.
- Add toppings.
- Enjoy!
Notes
*I used original hummus but this would also be great with garlic, black bean, olive, jalapeño, etc.
