This Prosciutto Wrapped Chicken is a simple but elegant chicken dinner recipe made with dijon mustard, prosciutto and fresh rosemary.
I now interrupt your regular Thanksgiving recipes with a recipe for chicken. (Side note: this would make a great recipe for Christmas dinner!)
Sometimes I get tired of chicken.
After eating it for a couple days, it seems like I just run out of unique ways to make it. Of course I know that I’m only hampered by my own imagination but when I’m in a rut and feeling kinda down on chicken, a lot of times I’ll make this recipe. It helps liven things up again.
It feels fancy even though it’s really not–it couldn’t be simpler to make which is even greater for right after Thanksgiving when you’ve been binge cooking for days and you need to chill but also want something delicious on the table.
Enter this prosciutto wrapped chicken. Delicious, easy to make, comes together in minutes. Then you just toss it in the oven and let it do the work. Wha-la, have yourself a delicious meal.
That’s something I can definitely be thankful for.
Recipe Notes
This recipe can easily be scaled up or down depending on the number of people you’re serving.
If you wanna get fancy, try changing it up a little and using different meats, different herbs or different spreads. Think herbs like thyme or tarragon, spreads like yogurt, harrissa, honey, and meats like cappicola, ham, etc.
