This Healthy 7 Layer Dip is a healthy version of the traditional favorite — made with black beans, ground turkey, greek yogurt, guacamole and bell pepper pico de gallo it’s the perfect dip for parties or game day food!
Happy Monday! Hope you all had a great weekend. I took Albus to the dog beach which was a fun. I don’t know where he gets his energy but that guy just wants to run and run and run. I had no idea French Bulldogs were so energetic but I love it. He looks like a little loaf of bread running around in the ocean.
Anywho, let’s talk about this Healthy 7 Layer Dip.
I was always the kid that stood by the snack table. Not the dessert table. The table with the chips and dip. I dunno what it is but chips and dip are pretty much my weakness in life. Something about the textures, the crunch of a chip and the creaminess of a good dip. The different possible flavor combinations which are pretty much endless.
I like dips a lot — making them, eating them, talking about them. But they’re not definitely not usually the healthiest things in the world and in my never ending quest to make delicious things that taste good but are also good for you, I started to think about a way to make something that was a tried and true favorite but healthier.
Enter this healthy 7 Layer Dip.
Mashed black beans cooked with garlic, learn ground turkey with salsa, greek yogurt, guacamole, bell pepper pico de gallo, a mix of two cheeses. It’s a dream dip in a bowl. Tons of flavor. Tons of depth. Perfect for the snack table or just put on top of your lap on the couch.
I served this slightly warm because I put ground turkey in it but you could serve it cold and it would still be good. If you want, you can also omit the turkey if you don’t want meat in it. You do you! Whatever floats your boat.
Either way, let’s grab some dippers and have a good time.
- Open can of black beans and drain, leaving about ½ tbsp of juice left. Add to a pot over medium-low heat, add in 1 tbsp minced garlic. Stir and let simmer for 10 minutes.
- While the beans are cooking, heat a pan over medium high heat. Add 1 tbsp olive oil then add in ground turkey. Break up in pan using spatula. Once turkey is no longer pink, add ½ cup salsa of choice and stir until well combined.
- Once beans are cooked, mash beans up until they're thickened (they do not need to be completely mashed, just chunky). Set aside.
- To assemble dip:
- Layer black beans in the bottom of a dish (I used 11x7). Top with ground turkey. Top the turkey with a layer of greek yogurt, then a layer of guacamole, then a layer of cheese and finally the bell pepper pico de gallo.*
